Whole hams are most traditionally cooked with at least the surrounding fat, and often the skin, adhering. The skin is scored in a criss-cross and a sweet glaze such as honey and mustard applied. Piercing the skin to insert a clove at the centre of each criss-cross square is highly iconic, but rarely met with.
