Original Receipt in 'The Cook and Housekeeper's Dictionary' by Mary Eaton (Eaton 1822);BEAN BREAD. Blanch half a pound of almonds, and put them into water to preserve their colour. Cut the almonds edgeways, wipe them dry, and sprinkle over them half a pound of fine loaf sugar pounded and sifted. Beat up the white of an egg with two spoonfuls of orange-flower water, moisten the almonds with the froth, lay them lightly on wafer paper, and bake them on tins.
