Bourbon Cream

A medium-bake white wheatflour sandwich biscuit, typically 2.½ins x 1.1ins x½ins thick, of two chocolate-coloured fingers with chocolate fondant between. Marked with the word 'BOURBON' and a series of incised dots.

The Bourbon, the first commercial cream sandwich biscuit, was introduced in 1910 under the name 'Creola' by Peek Frean's, and may well take its name from the aristocratic family who once held the thrones of France, Naples and Spain, a byword for consistency and luxury.
