Corned or Bully Beef

Shredded, cooked salt beef set in its own fat and jelly. Usually canned as 'Corned Beef'.

'Bully' may derive from the French for 'boiled beef'; 'boeuf bouilli'.



Tobias Smollett's 1753 'The adventures of Ferdinand Count Fathom' has "I could get no eatables upon the road, but what they called Bully, which looks like the flesh of Pharaoh's lean kine stewed into rags and tatters."
