Crown Roast

Rib of pork or lamb wrapped into a circle with bone spears extending upwards in imitation of a crown, roasted. The centre is often filled with stuffing or apple.

Although now seen as English, the style appears to have originated in the USA and is first noted in England from an item in the 'Camborne Chronicle ' of Thursday 01 February 1900; "A Crown roast of lamb is rather fanciful but pretty device of an American butcher. It is a rib roast rolled so that a row of ribs stand up all around in perfect imitation of a crown. When it is served the centre should be filled with peas or other delicate flavoured vegetable, and around the latter should be a garnish of parsley."
