Durham Buckwheat Cakes

Buckwheat batter with yeast, allowed to froth vigorously, poured and cooked as small pancakes. Served buttered.

Buckwheat is not a cereal grass but a herb of the genus Fagopyrum. Native to Russia, the triangular seeds are used to make buckwheat flour, the basis of the famous Russian blinis.
