From Gloucester hails an excellent savoury dish known as Squab Pie. Take thick slices of cold meat, cut into squares, and place in a piedish, together with some good stock, pepper, and salt- Boil four medium-sized onions and lay on top of the meat. For the next layer peel, core and parboil three goodsized apples. Pile on top one boiled swede turnip, mashed with a sufficient quantity of potatoes and a little butter. Place in a slow oven until nicely browned, and serve with good gravy.
