gingerbread known at least since a note by of July 1803 by the poet Percy Bysshe Shelley, who, the present-day
Horsham Gingerbread Company tell us; "lived just outside Horsham at Field Place, Warnham, wrote to an aunt, asking her to buy some gingerbread from a Horsham market to take on a picnic. Some sixty years later the gingerbread industry in Horsham was at its height, with gingerbread makers throughout the town using their own carved wooden moulds to produce a variety of different sizes and shapes of gingerbread."
In common with many traditional gingerbreads, the Horsham form was formerly prepared in decorated moulds, of which the local museum retains two fine examples, donated in 1914 and possibly late 18cent.
