Semi-hard medium bake thin biscuits made with coconut flakes or coconut fat. Rectangular with rounded edges and a small scalloped edge decoration. They have the word NICE in sans-serif capitals marked in the centre and are sprinkled with sugar crystals. Typically 2¼ ins x 1½ins x ¼ins thick.
First known in the London Army & Navy Stores catalogue for 1895, there is no evidence whatever that these biscuits originate from, have any connection with, or are even known in the French resort of Nice, they are therefore not to be pronounced 'neeess'. They are 'nice'.
