Take a gallon of rum, six pounds of lump sugar dissolved in a quart of lime juice, and mix the whole well together; then put it in a cask, and when fine, bottle it off for use.
Original Receipt in 'The Cook and Housekeeper's Dictionary' by Mary Eaton (Eaton 1822);CURRANT SHRUB. Strip some white currants, and prepare them in a jar as for jelly. Strain the juice, of which put two quarts to one gallon of rum, and two pounds of lump sugar. Strain the whole through a jelly bag.
