Wilfra Tarts

Shortcrust pastry base filled with a confection of various composition, but usually including a tart fruit flavouring such as apple or lemon. Eaten in Ripon during Wilfra week, the first week in August, to commemorate the cathedral's patron, St. Wilfred.

The Yorkshire Post in March 2011 (http://www.yorkshirepost.co.uk/) reportd that: "The early August celebration, now called St Wilfrid’s Procession, is still very popular, but the tradition of baking Wilfra Cakes - and their cousins, Wilfra Tarts, which are made with lemons, eggs, butter and ground almonds - appears to be dying out"
