Winter Pudding

Now usually a winter variant of Summer Pudding, a basin lined with brown bread and filled with boiled mixture of fruits typically available in winter, such as glace cherries, dried apricots, chopped dates, apples, raspberries and/or blackberries, with sugar, butter and sweet spices. Covered with a further bread lid and allowed to cool.

Earlier receipts are for a variety of rich puddings suitable for service in winter.
