Tasty Batter Pudding

Serves: 4

1 oz Shredded suet
4 oz Plain flour
Pinch Salt
2 Eggs, beaten
2 Tablespoon Sugar
1/2 Teaspoon Ground mixed spice
1 ½ oz Sultanas or currants
1 pint Milk

Preheat the oven to 180 °C / 350 °F / Gas 4.
Mix the suet, flour and salt together in a bowl. Make a well in the centre and stir in the beaten eggs. Add the sugar, spice and fruit, then stir in the milk until the batter is well-combined.
Pour into a well buttered 1.1 litre (2 pint) pie dish and bake for 1-1 ¼ hours, covering the top with a piece of kitchen foil if it appears to be browning too quickly. Serve in slices accompanied, if desired, with stewed fruit.
This pudding can be converted into a savoury dish by omitting the sugar, spice and fruit and serving it as an accompaniment to roast meats, especially pork.
